Alexander is Two

Alexander turned two a week ago.  I can't even believe two years have gone by since I held him in my arms for the first time. The last two years have been such a gift + joy. I am truly so grateful and thank the universe each and every day for blessing me with his life.  

My baby is now a boy! Alexander is so full of joy and life. His energy is soo contagious. He is a chatter box, he has a huge personality, he is so playful, and loves to laugh + have fun. He is also the sweetest, most loving and kind little human I know. He is curious, smart, and determined. He is constantly repeating new words and phases, asking questions like "what's that", "is that a plane ... school bus??".

I love that he loves to cuddle with his Mama. He even gets a little feisty when Daddy hugs me and doesn't include him for a family hug. Did I mention family hugs are the best these days? Yup. They are --specially when Alexander says "hugs". He is a great hugger and his besos (kisses) are extra sweet. 

Alexander loves trains, planes, cars, school buses and sports (typical boy!?), but he seems to favor hockey... I always knew he was a wild one at heart. He loves pizza, pasta, fruits, and broccoli. He loves to run around, ride the Tonka truck down the drive way, he loves walks with Mami, being tickled, and going to the park. He also loves loves books, instruments, and music. 

 

Letter to Alexander

"Alexander, your birthday was extra special this year.  Lola + Papa came up to visit, we went to the zoo and you had pasta for lunch. You were the life of the restaurant, you celebrated, sang happy birthday and toasted "cheers" over and over. You ran around in an open field... wild and free. You had ice cream cake for the first time and you really enjoyed it. We laughed and hugged  and kissed. We sang and danced and played. You really enjoyed yourself and so did we.

We celebrated your birthday times two. Abuy, Nona, Beba, Tita, Yandel and Elena also came to celebrate you turning twoo twoo.  Tita baked a choo choo train just for you and you loved spending time with everyone."

Recipe | Energy Balls

Today, I'm sharing my version of the energy ball. These energy balls are amazing! They are healthy + delicious, super easy to make, require no baking, and these are a great snack to keep around for an afternoon pick-me up or for a pre or post work-out snack. These simple + wholesome ingredients are jam packed with nutritious-goodness.

Simple + Wholesome Ingredients

--

Oats, quinoa, coconut flakes, peanut butter, chia seeds, flaxseeds, coconut oil,  honey + vanilla extract

--

1 heaping cup of quick or rolled oats 

1 heaping cup of cooked quinoa

1 heaping cup of unsweetened coconut flakes

1 cup of peanut butter (or your favorite nut butter)

¼ cup of chia seeds

¼ cup of flaxseed

¼ cup of coconut oil (melted)

1 heaping table spoon of raw honey (or 3 table spoons of maple syrup)

1 table spoon of vanilla extract

Prep

You will need a large bowl and a cookie sheet covered with parchment paper

Instructions

1. In a large bowl, place all the dry ingredients and than add all the wet ingredients

2. Combine all the ingredients really well

3. After all the ingredients are all mixed-in, scoop a heaping table spoon of the mixture and place in the palm of your hands (the mixture should look something like the image below)

4. With the palms of your hands, slightly press + roll, until you form your energy ball

5. Place the formed energy balls on the parchment-paper-covered cookie sheet

6. You may roll the balls in more coconut flakes or cocoa powder, if you like

Tips

 Refrigerate for at least 1 hours before eating

Store in a covered container in the fridge

Eat within 5-7 days

You may add or substitute any of the ingredients

The line is so whimsical and precious. I absolute love the attention to detail, the color schemes and the patterns.  The price points are super reasonable, ranging from $11.99 to $49.99 and the sizes range from 0-24 months.  If you love what you see, I'd recommend you get right way because these will sellout fast.
